Frozen French Fries Production Process

The meticulous control over each stage ensures the superior quality and frying performance of Dinweys’ frozen French fries. Our process is optimized for high dry matter retention, texture consistency, and long-term stability.

1. Raw Material Selection: The Foundation of Quality

We begin with high-quality potatoes selected specifically for processing.

Key Advantage: We exclusively use potato raw materials with a dry matter content exceeding 22% (DM)> 22%). This crucial factor ensures a lower oil absorption rate and a crispier final texture.

2. High-Efficiency Cleaning & Peeling

Raw potatoes undergo thorough cleaning followed by a precise, hygienic peeling process.

Key Technique: Peeling is performed using high-temperature steam, which minimizes surface damage and retains more of the potato’s valuable outer layer nutrients compared to mechanical abrasive methods.

3. Precision Cutting & Water Reduction

Potatoes are cut into uniform strips (e.g., standard 9mm or 12mm) using high-precision cutters. Ripple-cut styles are also available.

Crucial Step (Dewatering): Following blanching, we achieve a high product dehydration rate of 25%–30%. This optimized moisture removal is vital for minimizing oil absorption during frying and maximizing final crispiness.

4. Blanching & Color Protection

Strips are blanched at controlled temperatures (85–95°C) to remove excess starch and lock in color.

5. Pre-Frying (Par-Frying)

The fries are par-fried at approximately 160°C to develop the iconic golden color and form a protective outer layer, enhancing flavor and crunch when cooked by the end-user.

6. Advanced Quick Freezing

Rapid freezing is critical for locking in flavor and texture.

Advanced Technology: We utilize tunnel freezing technology (Tunnel Freezer) for rapid cooling. This method ensures that the core of the product is frozen quickly, preventing the formation of large ice crystals and maintaining optimal cell structure and texture stability.

7. Packaging & Quality Assurance

Fries are immediately sealed in protective, labeled packaging. Our standard products typically contain only potatoes and vegetable oil, upholding a commitment to clean labeling.
